PlayFood: Mini-Quiches

"Green Leaves and Yellow Grates"

From Cynthia Stenger
1/2 pound sharp cheddar cheese, shredded
1/3 cup Italian (seasoned) bread crumbs
1 can (13 3/4 oz) canned artichokes hearts, chopped 
6 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Tobasco or Old Bay seasoning

Preheat oven to 350°. Mix all ingredients together.
Grease mini-muffin pans. Fill mini-muffin pans about 3/4 full.
Bake about 12-15 minutes at 350°. Cheese was bubbly when cooked.
I used a small rubber spatula to remove quiches from the pan.

Makes ~36 mini-quiches.
