PlayFood: Samosas
"Indian Princesses"
Samosas, from the Moosewood Cookbook
Dough:
2 1/2 cups flour
1/2 tsp salt
1 cup buttermilk or yogurt
extra flour as needed
Filling:
2 large potatoes
1 tbs butter
1 cup finely minced onion
2 medium cloves garlic, minced
1 tbs freshly grated ginger
1 tsp mustard seeds
1 tsp dried coriander
3/4 tsp salt
1 1/2 cups uncooked green peas (frozen also work)
2 tbs lemon juice
cayenne to taste
garam masala to taste
1 Peel potatoes, chop the into 1-inch cubes,
and boil them with water in a saucepan until soft.
Drain and mash.
2 Melt butter in a saucepan and add onion, garlic,
ginger, mustard seeds, coriander, and salt.
Saute until onions are soft.
Add to mashed potatoes along with the remaining
ingredients.(peas, lemon juice, cayenne, and
garam masala.)
3 Make dumplings. This can take anywhere from 1-4
hours, depending on who and how many people are
doing it.
4 Preheat oven to 425. Put dumplings on a greased
cookie sheet and bake for 15 min. Take out the
dumplings and turn them over. Bake another 10
minutes at 375. They should be lightly browned
on both sides.
