PlayFood: Hummus and Cilantro Pinwheel
Sandwiches
"The Beginning of the Whirl"
"Pinwheels"
(based on Jackie Kiser's hummus recipe)
9 large flour tortillas (about 10" in diameter)
1 bunch of cilantro
2 Tablespoons toasted sesame seeds for garnish kp ind)
Make hummus according to the directions below.
Chop the cilantro.
Cut each tortilla into as large a square as possible. Spread a thin
layer of hummus over the tortilla, covering it (about 1/3 cup).
Sprinkle with chopped cilantro.
Roll the tortilla as tightly as possible. Wrap in plastic wrap and
refrigerate for at least an hour.
Unwrap tortilla roll, and cut into 1/2" slices. This is where you find
out if you've wrapped the tortilla tightly enough. If you haven't,
your pinwheels will collapse. Sprinkle with toasted sesame seeds.
Yield: 130-150
Hummus
2 15 oz. can garbanzos
1/2 cup toasted sesame seeds
4 tablespoons olive oil
6 tablespoons lemon juice
2 large clove garlic, cut in thirds
1/2 teaspoon ground cumin
Drain garbanzos, reserving liquid.
Put garbanzos, other ingredients into blender or food processor.
Whirl, adding as little garbanzo liquid as necessary to get a nice
spreadable consistency.
