PlayFood: Cheese Appetizer Cookies
"Hide-n-Seek"
(This recipe makes about 60 - that would take 4-6 hours to make/bake,
so we need either 1 masochistic volunteer doing a double recipe or 2
volunteers. It is a variation created by Karla Martin.)
15-30 stuffed green
olives, depending on size (you want 60 pieces
about ½ inch across)
1 c. butter, softened
1 c. unbleached flour (do not use self-raising)
1 c. whole wheat flour
½ tsp salt
2 tsp ground tarragon
12 oz. Shredded cheddar cheese (medium or sharp, I used medium –
about 2 c.)
Heat oven to 375 degrees
F. Drain olives; cut if large (jumbos can
be cut in fourths, smaller ones may be cut in half). In a medium
bowl, combine next 5 ingredients until crumbly as for piecrust.
Stir in cheese until well blended with flour mixture. Form cheese
mixture into 1-inch balls. For each ball, flatten in the palm of
your hand and wrap around a piece of olive. Re-roll and place balls
on an ungreased cookie sheet. Bake at 375 for 10 to 12 minutes or
until edges are lightly browned. Cool slightly before removing
from cookie sheet. Makes 60 cookies.
Note: It probably does
make some difference if you go to the effort
of finding a very good quality green olive. I used ones that were
preserved in a liquid with Chardonnay in it. Unfortunately, I cannot
suggest where to find such since they were given to me.
