PlayFood: Almond Cookies
"Long Almonds"
(Yes, the recipe and the alias are the same.)
100 cookies
1 egg
1 1/4 C powdered sugar
grated peel of 1 lemon
1 t vanilla extract
1 2/3 C ground almonds
1 t baking powder
Line 2 baking sheets with parchment paper.
In a medium bowl, beat egg with sugar for 3 minutes.
Add lemon peel and vanilla.
Mix in ground almonds and lemon peel and stir well.
Dampen plastic wrap.
Place mixture on plastic wrap and form into a 16 inch roll (or 2 8 inch rolls).
Freeze overnight.
Preheat oven to 350.
Cut dough into thin slices and space on parchment lined baking sheets.
Decorate slices with almond slivers.
Bake in a preheated over 10 minutes or until golden.
Cool on baking sheets on wire racks 2 minutes or until crisp.
Peel cookies off paper and cool on wire racks.
Note: If dough is not baked all at once, return remaining dough to freezer until use.
